Summary	Incorrect Czech encoding
Description	I'm not sure if this can be solved, or it is just something I have to learn to live with, but when I create a user from admin panel using Czech encoding, characters like Ú turn to &Uacute, š turns into &scaron etc. Functionally everything works, but this is annoying for my users when I send their name to mobile app using API and they see this mess instead of their name. I could deal with this in app by replacing all incoming entities, but this is sub-optimal solution. It would be better, if this issue wasn't a thing at all. When I manually edit the name in database, it works well, so this must be happening somewhere between entering the name in admin console and name being written to database. And if it is intentional for some kind of compatibility, I would like a button acknowledging things can break if these letters aren't converted to HTML entities. I could live with that, since after editing to correct letter, everything seems to work as expected.

Probably result of "return trim(htmlentities($item, ENT_QUOTES, 'UTF-8'));" in sanitize function. Could it be replaced with htmlspecialchars, or is there a particular reason why htmlentities was used instead?

trim = false turns off the trim function on input:: and fallback uses htmlentities instead of htmlspecialchars
